💧 Brewing direction (for whole beans)

• Water temperature：Recommended at 90°C–92°C. Use 90°C to reduce bitterness, or 91°C–92°C for clearer tea-like notes and aroma.
• Coffee-to-water ratio：Recommended at 1:15, for example 15g coffee to 225g water.
• Grind size：Medium-fine grind, close to white sugar. If the cup tastes bitter or dry, grind slightly coarser.
• Brewing time：For pour-over, aim for around 2 minutes 15 seconds to 2 minutes 45 seconds. If the drawdown is too slow, the tea-like note may become dry.
• Recommended brewers：Suitable for pour-over, filter coffee and French press. For French press, avoid steeping too long to reduce bitterness.

🥛 Black / milk pairing

It performs best as black coffee, where the red apple sweetness, oolong tea note, vanilla and cinnamon-like finish are clearer. With milk, the body remains, but the tea-like and spice-like notes become softer.

This is not a floral, citrusy or bright juicy coffee. If you prefer a lively acidic cup, an Ethiopian or other light-medium roast coffee may be more suitable.
