  3. 40 degrees or below : The bitterness begins to decrease, and the sweetness and sourness begin to increase. But if you prefer sour coffee, this temperature is more suitable for you to taste different sourness (such as Kenyan beans)

Beans themselves are fruits, and their sourness is not affected by temperature. If you feel that the sourness changes due to a drop in temperature, it is mainly because the beans themselves are relatively sweet.
