溫度呢個變數好大程度咁決定咗你杯咖啡沖煮出嚟嘅風味!

 

市面上其實已經有好多款唔同質料嘅咖啡濾杯

包括:塑膠、陶瓷、玻璃、金屬等等⋯⋯

唔同質料嘅咖啡濾杯喺咖啡大賽中都有被選用

係咖啡師手下沖煮出種種冠軍咖啡

1. 基本步驟要重視

相信唔少新入坑嘅朋友成日都會糾結自己點會每次沖咖啡都出唔到所標嘅風味,

成日去學習不同人嘅沖煮手法,係咪繞圈唔夠?係咪要先中心注水完係再繞圈?

往往維持水溫、暖杯等基本步驟好似被忽略咗或者輕視咗

 

2. 用不同濾杯要因應其缺點去改善

當你了解咗自己沖煮嘅豆種及選用沖煮嘅手法時,你有因應你選用嘅咖啡濾杯缺點而作出調整嗎?陶瓷濾杯喺注水後最快吸收熱能,相反塑膠同埋玻璃因為不導熱,明顯比陶瓷濾杯杯內溫度較低。

雖然只係相差2-5度左右,但溫度一定程度上會影響到,頭30秒悶蒸嘅過程同時亦係決定左一杯咖啡風味重要一環(高溫令香氣明顯/低溫影響萃取而澀)。淺焙豆維持用較高溫(建議90度或有人用超過90度)去激發豆重嘅特色風味,而深焙豆則可以低於90度(建議88度)已經足夠。

建議想激發咖啡更多香氣或減低咖啡萃取低嘅情況,可考慮沖煮前先對濾杯或咖啡杯進行暖杯。今次無呢方面嘅資料,但絕對相信暖杯呢個動作可以令濾杯維持係較高溫嘅水平,係正式沖煮時可以令溫差降低令咖啡萃取過程更順利!
