咖啡點解會帶苦澀味?越深色=苦?!

日常生活中,我哋飲到嘅連鎖店咖啡

都係偏向深烘焙嘅重口味為主

咁咖啡豆真係深色就代表濃度高及較苦?

呢句陳述只屬於部分正確。

 

我哋經常被傳統廣告或咖啡產品

灌輸緊咖啡豆嘅顏色=深褐色

主因源於生產者多為咗降低成本

而用深烘焙方式遮掩風味嘅參差(相關文章:link

 

咖啡豆越深色越苦?

咖啡豆顏色同苦感係相輔相成嘅變數

指嘅係咖啡豆可以因應不同嘅烘焙手法

或者烘焙度增加其咖啡濃度(又或者稱為苦感)

所以先會令人以為顏色越深就等於越苦

 

其實咖啡豆內部有一樣野係不變數 - 咖啡因

所謂嘅不變指不同咖啡豆種都含有咖啡因

只係咖啡因含量會因豆種而有所不同

(阿拉比卡:0.8-1.4%; 羅布斯塔:1.7-4%; 利比利卡:~1.2%)

咖啡因嘅多寡係直接影響緊咖啡豆沖煮出嚟嘅苦感

所以咖啡因愈重,咖啡苦味就愈重

咖啡豆 

而豆嘅顏色其實來自褐色素

會因應烘焙程度而有深淺不同

主要來自咖啡內嘅寡糖類、綠原酸(Chlorigenic Acid)、胺基酸等。

當中嘅綠原酸同咖啡苦味拉上關係(當中牽涉好多化學作用同分子,就唔詳細講喇~)

簡單而言,綠原酸會因烘焙時間長短而產生不同嘅分子

呢啲分子會影響咖啡嘅苦澀度

 咖啡烘焙度

  • 咖啡因+褐色素少(淺烘焙)=咖啡苦不明顯
  • 咖啡因+褐色素多(深烘焙)=咖啡苦較明顯

 

自己都可以控制咖啡苦度!

透過水粉比及沖煮手法去增強或減弱

除左咖啡因同烘焙度會影響咖啡苦度

水溫、咖啡粗幼度和沖煮時間都會影響到咖啡萃取

水溫高、咖啡幼、加上悶蒸同沖煮時間長都會突顯咖啡苦澀味

靚嘅咖啡豆喺不同味道嘅呈現會特別明顯

例如本來偏苦的曼特寧,若配合較低水溫(~85度)沖煮

可能反而得到較順口的輕爽感覺~

一樣的咖啡豆都可以帶出不同濃度嘅咖啡
