以下綜合咗幾個可供參考嘅沖泡水溫

針對淺、中、深焙嘅豆

淺焙配合較高水溫可以萃取出較濃、較明亮嘅風味;

相反深烘焙就要避免過萃令咖啡剩係得苦味

要用較低水溫慢慢將風味沖出嚟

常用水溫 淺烘焙 中烘焙 深烘焙

85-87度    
80-84度

就以衣索比亞同曼特寧做個比較

前者偏酸 而後者偏苦

即使係同一個水溫 出嚟效果都截然不同

常用水溫 衣索比亞(愛酸) 衣索比亞(不愛酸) 曼特寧(愛甘苦) 曼特寧(不愛太苦)
88-90度 高溫可突顯酸   深烘焙,用較高水溫萃取物多,濃度高  
85-87度   低溫可減少萃取,酸味會較低,甜感較好   通常都會用中溫去沖,基本嘅甘苦感會明顯,同時後段會帶甜感
