相信好多人喺Coffee Shop買咖啡豆

都發現大部分包裝袋都有個圓碌碌嘅膠塞

我哋稱之為單氣閥嘅豆袋

目的係可以限制袋內氣體排走嘅速度

又唔會被外界嘅氧氣進入而破壞內在新鮮度

好多人講:「 識飲咖啡一定係現磨好。」

呢句說話雖然都啱 試諗下有頭髮邊個想做癩痢?!

但唔係每個人都可以帶手沖杯返公司沖杯靚咖啡

掛耳包嘅保鮮喺呢個時候就非常重要

錯誤嘅選擇會令到掛耳包內嘅咖啡風味散失!

喺合適包裝(充氮)下掛耳包

大約可以保留7成咖啡風味

否則咖啡不但失去香氣,且會變得苦澀

 

小補充:

咖啡豆一旦被研磨後

咖啡豆內嘅芳香物質(籠統稱呼)

會因多於一個表面而大量釋出

如果此刻沒有盡快沖泡

咖啡原有嘅風味就會因香氣散失而失色。

會有部分香氣散失

但只要掛耳包能夠及時進行充氮包裝

就可以大大減低香氣流失嘅問題

若果你嘅掛耳包無用充氮包裝

而又無係短時間內飲完

你杯咖啡就可能不及新鮮時咁香濃順口喇~

 

充氮包裝如何延長咖啡風味呢?

一般而言,掛耳包能擺放嘅時間

 

沒有充氮/脫氧包裝

放脫氧劑

充氮包裝

擺放限期

7天內飲完

~4-6個月

一年至年半

 

咖啡豆烘焙完成後

二氧化碳夾埋帶住咖啡嘅香味會持續揮發

豆表面同時有油脂產生及含水量剩~5%

好容易同空氣嘅濕氣同氧氣產生反應

而使咖啡因氧化或受潮而變質(咖啡會變苦澀)

氮氣本身屬於惰性氣體無毒無害

作用可以令咖啡難令氧氣直接產生反應受氧化(類似冬眠狀態)

根據好多實驗結果

有充氮嘅食物(不單指咖啡)

喺風味保存上優勝於未充氮嘅食物

如果不充氮,都要揀擺咗脫氧劑(原理相近)
