上次講到烘焙嘅深淺需要配合不同粗幼嘅磨研
買現成磨好嘅咖啡粉 就改變唔到濃度?
答案係:No!
除咗咖啡豆 其他沖調因素都會影響濃淡!
以下兩點可以比大家參考下:

一、温度
唔好睇少水溫嘅重要性!!!
高溫啲嘅水(~88-92攝氏)
可以提高萃取率
令咖啡嘅風味被更多地萃取出來
自然會令味道更濃郁
相對而言 想淡口啲
就要用冇咁熱嘅水(~80-85攝氏)沖
自然會突出酸味同令濃度降低

二、悶蒸時間
悶蒸時間都會影響濃度
較長嘅悶蒸時間會令咖啡粉釋放較多二氧化碳
從而減底酸性
而如果喜歡酸一點
縮短一啲悶蒸時間就可以令佢淡一啲
